Ingredients

  • 4 medium potatoes (about 2 lbs), peeled and thinly sliced
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tsp dried herbs (such as thyme, rosemary, or oregano)
  • Salt and pepper to taste
  • 1/4 cup milk
  • 2 large eggs

Instructions

    Preheat the oven to 375°F (190°C).

    In a large skillet, heat 1 tbsp of olive oil over medium heat. Add sliced onions and cook until translucent, about 5 minutes.

    In a large bowl, combine sliced potatoes, cooked onion and garlic, cheese, dried herbs, salt, and pepper. Mix well to combine.
