Ingredients

  • 8 oz (225 g) spaghetti or soba noodles
  • 2 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 carrot, julienned
  • 2 green onions, sliced
  • 1 tbsp sesame seeds for garnish (optional)

Instructions

  1. 1

Cook the noodles according to package instructions. Drain and set aside.

  2. 2

In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, honey/maple syrup, garlic, and ginger to create the sauce.

  3. 3

In a large pan over medium heat, add the bell peppers, broccoli, snap peas, and carrot. Sauté for about 5-7 minutes until the vegetables are tender yet crisp.

  4. 4

Add the cooked noodles to the pan with the sautéed vegetables. Pour the sesame sauce over the noodles and toss well to combine.

  5. 5

Cook for an additional 2-3 minutes, stirring occasionally, until everything is heated through.

  6. 6

Serve hot, garnished with sliced green onions and sesame seeds if desired.
