Ingredients

  • 8 oz wide rice noodles
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 2 eggs, lightly beaten
  • 2 cups broccoli, chopped
  • 3 tbsp sweet soy sauce (or dark soy sauce)
  • 1 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1 tsp white pepper
  • 2 green onions, sliced (for garnish)

Instructions

  1. 1

Soak the rice noodles in warm water for about 30 minutes or until softened, then drain.

  2. 2

Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.

  3. 3

Add minced garlic and stir-fry for about 30 seconds until fragrant.

  4. 4

Add the shrimp to the pan and stir-fry for 2-3 minutes until they turn pink and opaque, then remove them from the pan and set aside.

  5. 5

In the same pan, add another tablespoon of oil and pour in the beaten eggs. Scramble the eggs until they are fully cooked.

  6. 6

Add the soft noodles and broccoli to the pan, stirring well to combine with the eggs.

  7. 7

Pour in the sweet soy sauce, oyster sauce, fish sauce, sugar, and white pepper. Stir everything together and cook for another 3-4 minutes, letting the noodles absorb the flavors.

  8. 8

Add the cooked shrimp back to the pan and mix well. Cook for an additional 1-2 minutes until heated through.

  9. 9

Serve hot, garnished with sliced green onions.
