Ingredients

  • 200g soba noodles
  • 1 small cucumber, julienned
  • 1 bell pepper (red or yellow), thinly sliced
  • 2 carrots, grated
  • 4 radishes, thinly sliced
  • 3 green onions, chopped
  • 1 tbsp sesame seeds (optional)
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp honey or maple syrup (optional)
  • Salt and pepper to taste

Instructions

  1. 1

Bring a large pot of water to a boil.

  2. 2

Add the soba noodles to the boiling water and cook according to package instructions (usually about 4-6 minutes).

  3. 3

Once cooked, drain the noodles and rinse them under cold water to stop the cooking process. Set aside.

  4. 4

In a large bowl, combine the julienned cucumber, sliced bell pepper, grated carrots, sliced radishes, and chopped green onions.

  5. 5

In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or maple syrup, and a pinch of salt and pepper to make the dressing.

  6. 6

Add the cooled soba noodles to the bowl with the vegetables and pour the dressing over the top. Toss gently to combine.

  7. 7

Sprinkle sesame seeds on top if using, and serve chilled. Enjoy your healthy soba noodle salad!
