Ingredients

  • 1 cup semolina (sooji)
  • 1/2 cup sugar
  • 1/4 cup ghee (clarified butter)
  • 2 cups water
  • 1/4 cup milk
  • 1/4 cup mixed nuts (cashews, almonds, raisins)
  • 1/2 tsp cardamom powder
  • 1 tbsp chopped fresh cilantro (for garnish, optional)

Instructions

  1. 1

Heat ghee in a pan over medium heat.

  2. 2

Add the semolina and roast it until it turns golden brown, stirring continuously.

  3. 3

In a separate pot, bring water and milk to a boil.

  4. 4

Once the semolina is roasted, carefully pour the boiling water and milk mixture into the pan, stirring continuously to prevent lumps.

  5. 5

Add sugar and cardamom powder. Mix well until the sugar is dissolved.

  6. 6

Lower the heat and cook for an additional 2-3 minutes, stirring occasionally, until the halwa thickens to your desired consistency.

  7. 7

Remove from heat and stir in the mixed nuts.

  8. 8

Garnish with chopped cilantro, if desired, and serve warm.
