Ingredients

  • 2 boneless, skinless chicken breasts, diced
  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon

Instructions

  1. 1

In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, cover, and reduce the heat to low. Cook for 15 minutes until all water is absorbed and the quinoa is fluffy.

  2. 2

While the quinoa is cooking, heat olive oil in a skillet over medium heat. Add diced chicken, cumin, paprika, salt, and black pepper. Cook for about 8 minutes, stirring occasionally, until the chicken is fully cooked and golden brown.

  3. 3

Once the chicken is done, remove it from the heat and let it sit for a couple of minutes.

  4. 4

In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, parsley, and lemon juice. Mix well to combine.

  5. 5

Serve the quinoa salad topped with the spiced chicken pieces and an extra squeeze of lemon if desired.
