Ingredients

  • β€’2 chicken breasts, diced
  • β€’1 cup jasmine rice
  • β€’2 cups chicken broth
  • β€’1 tbsp olive oil
  • β€’1 tsp garlic powder
  • β€’1 tsp onion powder
  • β€’1 tsp paprika
  • β€’1/2 tsp cayenne pepper
  • β€’1 cup bell peppers, diced (mixed colors)
  • β€’1 cup broccoli florets
  • β€’1/2 cup corn (frozen or canned)
  • β€’Salt and pepper to taste
  • β€’Chopped green onions for garnish (optional)
  • β€’Sriracha or hot sauce for serving (optional)

Instructions

  1. 1

Rinse the jasmine rice under cold water until the water runs clear. Drain and set aside.

  2. 2

In a medium saucepan, combine the rinsed rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.

  3. 3

While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the diced chicken and season with garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. Cook for about 5-7 minutes until the chicken is cooked through and no longer pink.

  4. 4

Add the diced bell peppers, broccoli florets, and corn to the skillet with the chicken. Stir and cook for another 5 minutes until the vegetables are tender but still crisp.

  5. 5

Once the rice is ready, fluff it with a fork and divide it into four bowls. Top each bowl with the spicy chicken and vegetable mixture.

  6. 6

Garnish with chopped green onions and serve with Sriracha or hot sauce on the side for those who like extra heat.
