Ingredients

  • 1 lb (450g) large prawns (peeled and deveined)
  • 2 cups jasmine rice
  • 1/4 cup olive oil
  • 6 cloves garlic (minced)
  • 2-3 red chili peppers (sliced thinly)
  • 1 tsp red pepper flakes
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

    Rinse the jasmine rice under cold water until the water runs clear.

    In a medium pot, add the rinsed rice and 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until rice is tender and water is absorbed.
