Ingredients

  • 400 grams beef flank steak
  • 200 grams rice noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon chili paste
  • 1 tablespoon lime juice
  • 2 tablespoons vegetable oil
  • 2 large eggs
  • 1 cup mixed salad greens, chopped
  • 1 carrot, julienned
  • 1 cucumber, sliced
  • Salt and pepper to taste

Instructions

  1. 1

Preheat a grill or grill pan over medium-high heat.

  2. 2

In a bowl, combine soy sauce, chili paste, lime juice, and vegetable oil. Season with salt and pepper. Add the beef, marinating for at least 10 minutes.

  3. 3

While the beef marinates, cook the rice noodles according to package instructions. Drain and set aside.

  4. 4

Bring a small pot of water to a boil and carefully lower in the eggs. Boil for 6-7 minutes for a soft yolk. Remove and immerse in cold water. Once cooled, peel and set aside.

  5. 5

Grill the marinated beef for 4-5 minutes on each side for medium-rare or until cooked to your liking. Remove from the grill and let it rest for a few minutes before slicing thinly.

  6. 6

To serve, arrange the rice noodles on plates, top with grilled beef, add chopped salad greens, carrot, cucumber, and halve the soft-boiled eggs. Drizzle with extra soy sauce if desired.
