Ingredients

  • 500 grams lamb shoulder, cut into 1-inch cubes
  • 1 tablespoon soy sauce
  • 2 teaspoons ground coriander
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 10 bamboo skewers, soaked in water for 30 mins
  • 1 cup peanut butter
  • 1/2 cup coconut milk

Instructions

  1. 1

In a bowl, mix together soy sauce, ground coriander, cumin, turmeric, brown sugar, and minced garlic. Add lamb cubes and marinate for at least 15 minutes.

  2. 2

Thread the marinated lamb onto soaked bamboo skewers, leaving a little space between each piece.

  3. 3

Preheat a grill or grill pan over medium-high heat. Once hot, place the skewers on the grill and cook for about 4-5 minutes on each side, or until the lamb is cooked to your liking.

  4. 4

In a saucepan, combine peanut butter and coconut milk over low heat, stirring until smooth and creamy. Cook for about 3-5 minutes until slightly warmed.

  5. 5

Remove skewers from the grill and serve hot with the peanut sauce on the side for dipping.

  6. 6

Garnish with fresh cilantro and sliced cucumbers, if desired.
