Ingredients

  • 2 cups whole wheat flour
  • 1 cup fresh spinach, chopped
  • 1 cup cheese (paneer or mozzarella), grated
  • 1 small onion, finely chopped
  • 2 green chilies, finely chopped (optional)
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 1/2 tsp salt (to taste)
  • 2 tbsp oil (for stuffing and cooking)
  • Water, as needed (for dough)
  • Extra flour, for dusting

Instructions

  1. 1

In a mixing bowl, combine whole wheat flour and salt. Gradually add water and knead to form a soft dough. Cover and let it rest for 15 minutes.

  2. 2

In a pan, heat 1 tablespoon of oil over medium heat. Add cumin seeds and let them splutter.

  3. 3

Add chopped onions and green chilies. Sauté until the onions turn translucent.

  4. 4

Add chopped spinach, turmeric powder, and garam masala. Cook until the spinach wilts. Remove from heat and let it cool.

  5. 5

Once cooled, mix in the grated cheese until well combined.

  6. 6

Divide the dough into equal portions and roll each portion into a ball.

  7. 7

Take one ball, flatten it slightly, and roll it out into a small circle. Place a spoonful of the spinach and cheese mixture in the center. Fold the edges over to seal the filling inside and roll it out gently into a paratha.

  8. 8

Heat a skillet over medium heat. Add a little oil and cook the paratha until golden brown on both sides, about 2-3 minutes per side. Repeat with remaining dough and filling.
