In a mixing bowl, combine whole wheat flour and salt. Gradually add water and knead to form a soft dough. Cover and let it rest for 15 minutes.
In a pan, heat 1 tablespoon of oil over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and green chilies. Sauté until the onions turn translucent.

Divide the dough into equal portions and roll each portion into a ball.
Take one ball, flatten it slightly, and roll it out into a small circle. Place a spoonful of the spinach and cheese mixture in the center. Fold the edges over to seal the filling inside and roll it out gently into a paratha.
Heat a skillet over medium heat. Add a little oil and cook the paratha until golden brown on both sides, about 2-3 minutes per side. Repeat with remaining dough and filling.
