Ingredients

  • 4 large bell peppers (any color)
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup cooked quinoa
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

    Preheat the oven to 375°F (190°C).

    Cut the tops off the bell peppers and remove the seeds and membranes.

    In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened, about 3-4 minutes.

    Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.

    In a large bowl, combine the cooked quinoa, sautéed spinach mixture, crumbled feta cheese, oregano, salt, and pepper. Mix well.

    Stuff each bell pepper with the quinoa and spinach mixture, packing it in gently.

    Place the stuffed peppers upright in a baking dish. Add a splash of water to the bottom of the dish to help steam the peppers.

    Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes until the tops are slightly golden.
