Ingredients

  • 14 oz (400g) firm tofu
  • 4 cups fresh spinach
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1/2 tsp sesame oil
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1 green onion, sliced (for garnish)

Instructions

  1. 1

Press the tofu for about 10 minutes to remove excess moisture, then cut it into bite-sized cubes.

  2. 2

Heat the olive oil in a large skillet or wok over medium-high heat.

  3. 3

Add the minced garlic and ginger to the skillet and sauté for about 30 seconds until fragrant.

  4. 4

Add the cubed tofu to the skillet and cook until golden brown on all sides, about 5-7 minutes.

  5. 5

Pour in the soy sauce, sesame oil, black pepper, and red pepper flakes (if using), stirring well to coat the tofu.

  6. 6

Add the fresh spinach to the skillet and stir-fry for an additional 2-3 minutes until wilted.

  7. 7

Taste and adjust seasoning if necessary, then remove from heat.

  8. 8

Serve hot, garnished with sliced green onion.
