Ingredients

  • 14 oz firm tofu
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tsp cornstarch
  • 1/4 cup water
  • Salt and pepper to taste
  • Cooked rice or noodles for serving (optional)

Instructions

  1. 1

Press the tofu for 10 minutes to remove excess moisture, then cut it into bite-sized cubes.

  2. 2

In a large skillet or wok, heat the vegetable oil over medium-high heat.

  3. 3

Add the tofu cubes and stir-fry until golden brown on all sides, about 8-10 minutes. Remove the tofu from the skillet and set aside.

  4. 4

In the same skillet, add sesame oil, garlic, and ginger. Sauté for 1 minute until fragrant.

  5. 5

Add the sliced bell peppers, broccoli florets, and snap peas. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.

  6. 6

In a small bowl, mix soy sauce, cornstarch, and water. Pour this mixture over the vegetables in the skillet and stir well.

  7. 7

Return the tofu to the skillet and toss everything to combine. Cook for another 2-3 minutes until heated through. Season with salt and pepper to taste.

  8. 8

Serve the stir-fried tofu and vegetables over cooked rice or noodles if desired.
