Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 1 bell pepper (any color), sliced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 8 small flour tortillas
  • Optional toppings: sour cream, guacamole, salsa, shredded cheese

    Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

    Add sliced onion and bell pepper to the skillet. Sauté for about 5 minutes until they start to soften.

    Push the vegetables to the side of the skillet and add the remaining tablespoon of olive oil. Add the chicken breasts to the skillet.
