Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (red or green)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (adjust for spice preference)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 cup beef broth (or water)
  • Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro

Instructions

  1. 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

  2. 2

Add the chopped onion and bell pepper, cooking for 5 minutes until softened.

  3. 3

Stir in the minced garlic and cook for another minute until fragrant.

  4. 4

Add the ground beef to the pot, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.

  5. 5

Drain excess grease if needed. Stir in the chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper, cooking for another 2 minutes to bloom the spices.

  6. 6

Mix in the crushed tomatoes, kidney beans, and beef broth. Stir well to combine.

  7. 7

Bring the chili to a simmer, then reduce the heat to low. Cover and let it cook for 30 minutes, stirring occasionally.

  8. 8

Taste and adjust seasoning if needed before serving hot with desired toppings.
