Ingredients

  • 4 large bell peppers (any color)
  • 1 pound ground lamb
  • 2 large eggs
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked quinoa
  • 1/2 cup chopped fresh parsley
