Ingredients

  • 8 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup bell peppers, diced
  • 1 cup spinach, chopped
  • 1/2 cup onion, diced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

Instructions

  1. 1

Preheat the oven to 350°F (175°C).

  2. 2

In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.

  3. 3

Heat the olive oil in a large oven-safe skillet over medium heat. Add the diced onion and bell peppers, sauté for about 5 minutes until they soften.

  4. 4

Add the chopped spinach to the skillet and cook for another 2 minutes until wilted.

  5. 5

Pour the egg mixture over the vegetables in the skillet, stirring gently to combine.

  6. 6

Sprinkle the shredded cheese evenly on top of the egg mixture.

  7. 7

Cook on the stovetop for about 5 minutes until the edges begin to set, then transfer the skillet to the preheated oven.

  8. 8

Bake for 20-25 minutes, or until the frittata is set and lightly golden on top. Allow to cool slightly before slicing and serving.
