Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 cup mixed vegetables (carrots, peas, corn, bell peppers)
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 1 tsp ginger, minced
  • 2 green onions, sliced
  • Salt and pepper to taste
  • 1 egg (optional)

Instructions

  1. 1

Heat the vegetable oil in a large skillet or wok over medium heat.

  2. 2

Add minced garlic and ginger, and sauté for 1-2 minutes until fragrant.

  3. 3

Add the mixed vegetables and stir-fry for 3-4 minutes until they are tender.

  4. 4

Push the vegetables to one side of the skillet. If using, crack the egg into the empty side and scramble it until cooked.

  5. 5

Add the cooked rice to the skillet, breaking up any clumps, and mix everything together thoroughly.

  6. 6

Pour the soy sauce over the rice and stir to combine evenly. Cook for another 2-3 minutes until heated through.

  7. 7

Season with salt and pepper to taste, and stir in the sliced green onions before serving.
