Ingredients

  • 1/2 cup peanut butter
  • 1/4 cup rice flour
  • 2 cups vegetable broth
  • 1 medium eggplant, sliced
  • 1 cup green beans, trimmed
  • 2 cups cauliflower florets
  • 1 cup banana hearts, sliced
  • 1 cup bok choy, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 1 tbsp bagoong (fermented shrimp paste)
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp soy sauce (optional)

Instructions

  1. 1

In a pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.

  2. 2

Stir in the sliced eggplant and green beans. Cook for about 5 minutes, until slightly softened.

  3. 3

Add the vegetable broth to the pot and bring to a simmer. Then, add the cauliflower, banana hearts, and bok choy.

  4. 4

In a separate bowl, mix the peanut butter and rice flour with a little water to create a smooth paste. Gradually add this to the simmering pot, stirring to combine.

  5. 5

Allow the stew to simmer for about 20 minutes, stirring occasionally until the vegetables are tender and the sauce has thickened.

  6. 6

Season the kare-kare with salt, black pepper, and soy sauce if using. Stir well to combine all the flavors.

  7. 7

Serve the vegetable kare-kare hot, with bagoong on the side for added flavor. Enjoy!
