Ingredients

  • 2 cups zucchini, sliced
  • 2 cups fresh spinach
  • 15 oz ricotta cheese
  • 2 cups mozzarella cheese, shredded

  • 1 jar (24 oz) marinara sauce
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil

Instructions

    Preheat the oven to 375°F (190°C).

    In a skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Layer 3 lasagna noodles, half of the ricotta mixture, half of the vegetable mixture, a third of the mozzarella cheese, and then some marinara sauce. Repeat the layers once more with another layer of noodles, ricotta, vegetables, and sauce.

    Top the final layer with the remaining noodles, marinara sauce, and the remaining mozzarella and Parmesan cheese.

    Cover loosely with foil and bake in the preheated oven for 30 minutes. Afterward, remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden. Let it cool for 5-10 minutes before slicing and serving.
