Ingredients

  • 2 cups cooked jasmine rice (preferably day-old)
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1-2 green chilies, sliced (optional)
  • 2 tablespoons soy sauce
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • Salt to taste
  • 2 green onions, sliced (for garnish)
  • Cilantro leaves (for garnish)

Instructions

  1. 1

Heat vegetable oil in a large pan or wok over medium heat.

  2. 2

Add minced garlic and chopped onion. Sauté until fragrant and the onion becomes translucent.

  3. 3

Add the mixed vegetables and sliced green chilies. Stir-fry for about 2-3 minutes until the vegetables are tender.

  4. 4

Push the vegetables to one side of the pan and add the cooked rice to the other side. Stir well to combine.

  5. 5

Pour soy sauce, sweet soy sauce, ground coriander, ground cumin, and salt over the rice. Mix everything together thoroughly.

  6. 6

Continue to stir-fry for another 2-3 minutes until rice is heated through and well combined with the vegetables and spices.

  7. 7

Taste and adjust seasoning if necessary. Remove from heat.

  8. 8

Garnish with sliced green onions and cilantro leaves before serving.
