Ingredients

  • 400g firm tofu, cubed
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 carrots, julienned
  • 3 green onions, chopped
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 1/4 cup water
  • 1 tsp sesame seeds (for garnish)

Instructions

  1. 1

Press the tofu for 10 minutes to remove excess moisture, then cut it into cubes.

  2. 2

In a large pan or wok, heat vegetable oil over medium-high heat. Add the tofu cubes and sauté until golden brown on all sides, about 5-7 minutes.

  3. 3

Add garlic and ginger to the pan, stirring for about 30 seconds until fragrant.

  4. 4

Add the sliced bell peppers, broccoli, snap peas, and carrots to the pan. Stir-fry for 5-7 minutes until the vegetables are tender yet crisp.

  5. 5

In a small bowl, mix soy sauce, sesame oil, cornstarch, and water. Pour this sauce over the stir-fried vegetables and tofu, stirring to coat evenly.

  6. 6

Continue to cook for another 2-3 minutes until the sauce thickens slightly.

  7. 7

Remove from heat and garnish with chopped green onions and sesame seeds before serving.
