Ingredients

  • 4 medium potatoes, peeled and grated

  • 1 bell pepper, finely chopped (any color)
  • 1 cup spinach, chopped

  • 1 tsp thyme (dried or fresh)
  • Salt and pepper, to taste
  • 3 tbsp olive oil
  • 1 cup grated Swiss cheese (optional)
  • Sour cream or yogurt, for serving (optional)

Instructions

    Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible to help them crisp up when cooked.

    In a large mixing bowl, combine the grated potatoes, chopped onion, bell pepper, spinach, minced garlic, parsley, thyme, and season with salt and pepper.

    Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat. Once hot, add the potato mixture and press it down to form an even layer.

    Cook for about 8-10 minutes until the bottom is golden and crispy. If using cheese, sprinkle it on top once the bottom is set.
