Ingredients

  • 400g udon noodles
  • 2 tbsp vegetable oil
  • 1 medium carrot, julienned
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Instructions

  1. 1

Cook the udon noodles according to package instructions, drain, and set aside.

  2. 2

In a large skillet or wok, heat the vegetable oil over medium-high heat.

  3. 3

Add the minced garlic and ginger, stir-frying for about 30 seconds until fragrant.

  4. 4

Add the carrot, bell pepper, broccoli, and snap peas to the skillet. Stir-fry for about 5 minutes, until the vegetables are tender-crisp.

  5. 5

Add the cooked udon noodles to the skillet along with the soy sauce, oyster sauce (if using), and sesame oil. Toss everything together until well combined and heated through, about 2-3 minutes.

  6. 6

Season with salt and pepper to taste.

  7. 7

Remove from heat, garnish with chopped green onions and sesame seeds if desired, and serve hot.
