In a large bowl, combine the yogurt and vanilla extract (if using). Stir until well mixed.
Take four serving glasses or bowls and start layering the parfait.
Add a layer of yogurt at the bottom of each glass (about 1 cup).
Sprinkle a layer of granola on top of the yogurt (about 1/2 cup).
Add a layer of mixed fresh fruits on top of the granola (about 1/2 cup).
Repeat the layers until the glasses are filled, finishing with a layer of fruits on top.
Drizzle honey over the top of each parfait if desired.
Serve immediately or refrigerate for up to 30 minutes before serving.
