  • 1 onion, sliced
  • 2 cups cooked rice (white or brown)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (frozen or canned)
  • 1 cup fresh salsa
  • 1 avocado, diced
  • 1/2 cup shredded cheese (cheddar or Mexican blend)

Instructions
