Ingredients

  • 2 chicken breasts (about 1 lb), thinly sliced
  • 2 tbsp soy sauce (gluten-free if needed)
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 carrot, julienned
  • Salt and pepper to taste
  • 1 green onion, sliced (for garnish)

Instructions

    In a bowl, combine the sliced chicken, soy sauce, and cornstarch. Mix well and let it marinate for 10 minutes.

    Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

    Add the marinated chicken to the skillet and stir-fry for about 5-6 minutes or until fully cooked. Remove chicken from the skillet and set aside.

    In the same skillet, add the remaining oil, garlic, and ginger. Stir-fry for about 30 seconds until fragrant.
