Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 tsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt to taste
  • Fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. 1

Rinse the brown rice under cold water until the water runs clear.

  2. 2

In a medium saucepan, combine the brown rice and water. Bring to a boil.

  3. 3

Reduce heat to low, cover, and simmer for 45 minutes or until rice is tender and water is absorbed.

  4. 4

While the rice cooks, in a large skillet, heat the olive oil over medium heat.

  5. 5

Add the diced bell pepper, corn, cumin, and chili powder. Sauté for about 5 minutes until the peppers are softened.

  6. 6

Stir in the black beans and heat through for another 2-3 minutes. Season with salt.

  7. 7

Once the rice is done, fluff it with a fork and divide it into four bowls.

  8. 8

Top each bowl of rice with the black bean mixture, sliced avocado, and garnish with fresh cilantro and a lime wedge.
