Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  1. 1

Preheat your oven to 375°F (190°C).

  2. 2

In a mixing bowl, combine the chopped spinach, cream cheese, mozzarella cheese, minced garlic, onion powder, oregano, salt, and pepper. Mix well until fully combined.

  3. 3

Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.

  4. 4

Stuff each chicken breast with the spinach and cheese mixture, securing the opening with toothpicks if necessary.

  5. 5

In an oven-safe skillet, heat the olive oil over medium-high heat. Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.

  6. 6

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

  7. 7

If using, sprinkle grated Parmesan cheese on top of the chicken during the last 5 minutes of baking.

  8. 8

Remove from the oven, let rest for a few minutes, then serve.
