Press the tofu to remove excess moisture, then cut it into 1-inch cubes.
Toss the tofu cubes in cornstarch until evenly coated.
Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat. Add the tofu and cook until golden and crispy on all sides, about 8-10 minutes. Remove and set aside.
In the same pan, add the remaining tablespoon of oil. Stir-fry the garlic and ginger for about 30 seconds until fragrant.
Add the sliced bell peppers, broccoli, and snap peas to the pan. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
Return the crispy tofu to the pan and pour in the soy sauce and teriyaki sauce. Stir well to coat everything in the sauce and heat through for another 2-3 minutes.
Drizzle with sesame oil and sprinkle with sesame seeds, if using. Serve over cooked rice or noodles.
