Ingredients

  • 4 gluten-free tortillas
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 bell pepper, diced
  • 1 small zucchini, diced
  • 1 cup corn (canned or frozen)
  • 1/2 cup black beans, rinsed and drained
  • 1 tsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup salsa (for serving)

Instructions

    Heat olive oil in a large skillet over medium heat.

    Add diced bell pepper and zucchini to the skillet. Sauté for 3-4 minutes until softened.

    Stir in corn, black beans, cumin, chili powder, salt, and pepper. Cook for another 2-3 minutes.

    Remove the vegetable mixture from the skillet and set aside.

    In the same skillet, place one tortilla and sprinkle half of the cheese on one half of the tortilla.

    Add a portion of the vegetable mixture on top of the cheese, then sprinkle the remaining cheese over the veggies.

    Fold the tortilla in half and cook for 2-3 minutes on each side until golden brown and the cheese is melted.
